Roasted Chicken Sausage with Peppers and Onions

Screen Shot 2016-04-12 at 11.16.07 AMGot some requests asking what I ended up making with the peppers yesterday. If you are looking for something on the lighter side for a week night dinner, look no further.

You’ll need:

  • chicken sausage
  • bell peppers
  • red onions
  • olive oil
  • salt and pepper

Directions:

  1. Clean and cut bell peppers into big pieces.
  2. Cut red onion into big pieces.
  3. Place the baking sheet into a oven and put the heat to 400 degrees.
  4. Allow the oven to pre-heat with the pan in it
  5. In a late bowl toss the peppers and onions with just a light coating of olive oil and season with salt and pepper.
  6. Dump them onto the hot baking sheet and spread them out.
  7. To one side put the sausage onto the baking sheet and place on the oven.
  8. After 15 minutes turn the sausage and toss the the peppers and onions
  9. After 10 minutes toss the sausage into the onions and peppers and continue to roast till done.

Bread? No bread? Either way this is delicious!
