Roasted Red Peppers

RoadredpeppersNow, I do love them the traditional way without the skin but I love them even MORE done this way.

You’ll need:

  • red bell peppers
  • olive oil
  • salt
  • pepper

Directions:

  1. Pre-heat the oven to 500 degrees.
  2. Clean the peppers and then toss in a little olive oil, salt and pepper.
  3. Then place them on a baking sheet. Put them in the oven for 10 minutes then flip them and roast another 5 minutes. 

I use these on salads, in sandwiches, with pastas, just the way they are and many other ways. I freeze what I don’t use in batches.
