Halloween Meatball Recipe: Stuffed Jack-o-Lantern Peppers

Stuffed peppers can take hours to make. But this Halloween, we have a trick that will not only make this treat easy to prepare, but fun to eat as well!

Ingredients:

1 box Mama Mancinis Meatballs and Slow Cooked Italian Sauce

1 cup cooked rice

3 orange peppers

Directions:

Preheat oven to 350°.

Boil rice according to package instructions.

With a fork, mash meatballs and sauce until resembles chopped meat. Combine rice and mashed meatballs.

Slice the tops of each pepper off, and save the top. Remove seeds and membranes from the peppers. Cut out a jack-o-lantern shape face on one side of each pepper (small triangles for eyes and a half-moon for the smile).

Divide the meatballs-rice mixture evenly among each pepper. Cover with the original pepper tops. Place stuffed peppers in a baking dish with hallowed side facing upwards.

Bake for approximately 45 minutes or until peppers are soft.
