Mama Mancini’s Pesto Sauce

Basil is in season, abundant and very affordable especially if you grow it yourself so let’s make some pesto!

Ingredients

  • 8-cups fresh basil leaves
  • 1/4-cup of pine or walnuts nuts lightly toasted.
  • 2-garlic cloves
  • 3/4-cup extra virgin olive oil
  • 1/2-cup of grated parmesan cheese

Directions

In a food processor add the pine nuts, garlic, cheese and pulse till pine nuts are combined.

Add the basil and while running slowly add the olive oil.

Keep processing until the pesto is smooth

Prepare 1 pound of pasta, reserve 1/4 cup pasta water then strain the pasta.

Add the pasta to a large bowl with the pesto and the pasta water, toss until the pasta is fully coated with the pesto.
