Dan Mancini’s Pasta Pomodoro

This no-cook pomodoro sauce is the perfect summer sauce for all of your pasta dishes!

Ingredients

  • 1/2-pound spaghetti (or pasta of choice)
  • 1 pint cherry tomatoes, halved
  • 4 garlic cloves, minced very fine
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 20 basil leaves, torn

Directions

Add the olive oil, garlic, tomatoes, basil, salt and pepper to a large bowl.

Stir everything together, cover with plastic wrap and leave on the counter.

After 30 minutes, smash the tomatoes with a fork (or a small potato masher). Repeat a couple of times while they marinate for 2 to 4 hours.

Cook your pasta until its done, and then strain immediately.

Add the pasta back to the pot and add in the tomatoes. Toss for a couple of minutes (the starch in the pasta will create a creamy sauce so keep tossing).

Plate the pasta pomodoro, and drizzle on some extra virgin olive oil.
