Italian Tomato Soup

Ingredients

  • 1-28 can of whole Italian plum tomatoes puréed in a blender
  • 4-tbs of unsalted butter
  • 1-qt of chicken or vegetable stock
  • 1-tsp salt
  • 1/2-tsp fresh black pepper
  • 1/4-cup heavy cream
  • 1/4-cup minced onion
  • 1/2-tsp dry oregano my Italian twist
  • 1/2-tsp dry thyme

Directions

In a pot on a medium heat add the butter, onion, pepper and sauté for 5 minutes. Do not allow the onion to brown, just become translucent.

Add the stock, tomatoes, oregano, thyme cover lower the heat to a low simmer and simmer for 20 minutes.

After 20 minutes turn off the heat let it rest for 2 minutes then stir in the heavy cream and serve.
