I often get asked, what would be a delicious side dish when serving pasta made with our Mama Mancini’s meatballs and sauce. How about giving my recipe for Grilled Romaine Lettuce a try. It’s light, easy, and the perfect complement to a pasta dinner!

Grilled Romaine Lettuce
Ingredients
- Romaine lettuce heads, halved
- 1/2-cup extra virgin olive oil
- 2-garlic cloves minced fine
- 2-tbsp onion minced fine
- 1/2-tsp salt
- Fresh grated Parmigiano Reggiano
- Balsamic vinegar
Directions

Heat the grill to hot.

Mix the olive oil, garlic, onion, salt, and balsamic vinegar together in a bowl.

Brush the mixture onto both sides of the romaine lettuce.

Place the romaine lettuce on the grill cut side up, then flip after 1 minute and grill the romaine cut side down for 2 minutes.

Remove from grill.

Sprinkle the top with Parmigiano Reggiano & a drizzle of olive oil, and serve immediately.
