Black Bean Corn Salad with Stuffed Tomatoes
Tomatoes are in season! Here is my recipe for a delicious summer stuffed tomato with quinoa.
For the Stuffed Tomato you’ll need:
- Tomatoes
- My black bean corn salad (recipe below)
- Prepared quinoa
- Extra virgin olive oil
Directions:
- First thing you need to do is cut the top off the tomatoes and scoop all the pulp and juice out
- Prepare the quinoa (I add the tomato juice and pulp to the water used to prepare the quinoa)
- In a bowl mix 1-cup of my black bean corn salad to 1/2 cup of prepared quinoa
- Stuff the tomatoes with the mixture and serve with a drizzle of extra virgin olive oil and a squeeze of lime juice
For the Black Bean and Corn Salad
- 1 10 ounce can of black beans rinsed
- 1 cup of cooked corn
- 1 red bell pepper diced
- 1 garlic clove minced
- 1 tbs of extra virgin olive oil
- Juice from 1 lime
- 1 tsp salt
- 1 tsp cracked black pepper
- 1/2 tsp ground cumin
