Black Bean Corn Salad with Stuffed Tomatoes

Black Bean Corn SaladTomatoes are in season! Here is my recipe for a delicious summer stuffed tomato with quinoa.

 

For the Stuffed Tomato you’ll need:

  • Tomatoes
  • My black bean corn salad (recipe below)
  • Prepared quinoa
  • Extra virgin olive oil

 

Directions:

  1. First thing you need to do is cut the top off the tomatoes and scoop all the pulp and juice out
  2. Prepare the quinoa (I add the tomato juice and pulp to the water used to prepare the quinoa)
  3. In a bowl mix 1-cup of my black bean corn salad to 1/2 cup of prepared quinoa
  4. Stuff the tomatoes with the mixture and serve with a drizzle of extra virgin olive oil and a squeeze of lime juice

 

For the Black Bean and Corn Salad

  1. 1 10 ounce can of black beans rinsed
  2. 1 cup of cooked corn
  3. 1 red bell pepper diced
  4. 1 garlic clove minced
  5. 1 tbs of extra virgin olive oil
  6. Juice from 1 lime
  7. 1 tsp salt
  8. 1 tsp cracked black pepper
  9. 1/2 tsp ground cumin
