Pork Ragu

Pork RaguThis is a recipe that takes a little time to make but I promise, you are gonna go crazy over it. This will be a keeper.

You’ll need

  • 1.5 lbs Country style pork spareribs
  • 1 tsp salt
  • 1 tsp ground pepper
  • 2 Tbs. olive oil
  • 1 cup onion, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup celery stalk, chopped
  • 1-cup chicken stock
  • 1/2 cup dry red wine
  • 1 can 28 oz can whole Italian plum tomatoes crushed by hand

Directions:

  1. In a Dutch oven add the olive oil and once hot add the ribs and brown on all sides for about 15 minutes. Remove the ribs to a plate.
  2. Add the onion, carrot and celery to the pot, reduce the heat to medium and cook until golden about 10 minutes.
  3. Add the wine and deglaze, scraping up the browned bits from the pot.
  4. Add the tomatoes, stock and bring to a slow boil.
  5. Put the ribs back into the pot, cover, reduce the heat to low and cook until the meat falls off the bone, about 2 1/2 hours.
  6. Remove the ribs from the sauce and once cool enough to handle remove the meat from the bones and shred it.
  7. Add the meat back to the sauce, taste for salt and pepper and on a low heat cook uncovered until the sauce thickens this will take 10-15 minutes.
