Pork Ragu
This is a recipe that takes a little time to make but I promise, you are gonna go crazy over it. This will be a keeper.
You’ll need
- 1.5 lbs Country style pork spareribs
- 1 tsp salt
- 1 tsp ground pepper
- 2 Tbs. olive oil
- 1 cup onion, chopped
- 1/2 cup carrot, chopped
- 1/2 cup celery stalk, chopped
- 1-cup chicken stock
- 1/2 cup dry red wine
- 1 can 28 oz can whole Italian plum tomatoes crushed by hand
Directions:
- In a Dutch oven add the olive oil and once hot add the ribs and brown on all sides for about 15 minutes. Remove the ribs to a plate.
- Add the onion, carrot and celery to the pot, reduce the heat to medium and cook until golden about 10 minutes.
- Add the wine and deglaze, scraping up the browned bits from the pot.
- Add the tomatoes, stock and bring to a slow boil.
- Put the ribs back into the pot, cover, reduce the heat to low and cook until the meat falls off the bone, about 2 1/2 hours.
- Remove the ribs from the sauce and once cool enough to handle remove the meat from the bones and shred it.
- Add the meat back to the sauce, taste for salt and pepper and on a low heat cook uncovered until the sauce thickens this will take 10-15 minutes.
