Garlic Grilled Shrimp

Garlic Grilled Shrimp2Here is another recipe for grilling shrimp. Here we are leaving the shells on but have sliced the back shell and removed the vein. This makes it very easy to peel the shell once cooked.

Marinade:

  • 1/2 cup olive oil
  • 1/2 cup fresh squeezed lemon juice
  • Zest of one lemon
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbs chopped Fresh rosemary or fresh herb of your
  • choice
  • 5-6 garlic cloves minced
  • Lemon wedges for serving

Directions:

  1. Mix all the ingredients in a bowl, cover and refrigerate for a couple hours.
  2. One hour before you are before you are Going to grill the shrimp place the shrimp and all but 1/4 cup marinade in a zip bag, remove the air and place in the fridge.
  3. Heat your grill to hot and place the shrimp on the hot grill. Brush with the balance of the marinade as the shrimp cook. The shrimp are going to cook very fast 2-3 minutes on the first side and 1 min on the other side.
  4. Remove shrimp to a plate once they are done. I served mine with some zucchini and tomatoes grilled with some salt, pepper and olive oil. Fresh lemon wedges on the side.
