Ricotta Cheese…a Magic Cheese

Ricotta Cheese...a Magic CheeseI would help my Grandmother make ravioli, manicotti, lasagna all using Ricotta Cheese. One day she said she was going to make dessert and sent me to the store to buy ricotta cheese. I remember being a little confused as to how could something we would always use to make dinner, become a dessert. But what happened when I handed Grandma the ricotta, was magic.

You will need:

  • 1-lb ricotta cheese
  • 1/2 cup heavy cream
  • 1- tsp of pure vanilla
  • 1-tbs of sugar, more if you like a sweeter dessert.
  • Shaved or grated dark chocolate
  • Fresh berries

Directions:

  1. Drain the ricotta of as much liquid as possible by placing it in a strainer or cheese cloth and then place it over a bowl and into the fridge. I let mine drain for 8 hours or over night.
  2. When you are ready to prepare this dessert add the vanilla to the cream and whip it. Place the whipped cream in a bowl. Place the ricotta and sugar to a mixing bowl and whip it until it becomes creamy, a couple minutes, then add the whipped cream and whip everything together until combined. Place this back in the fridge to chill for 30 minutes.
  3. Serve with the berries and some shaved or grated chocolate. It’s that simple and it’s very delicious. You gotta try it.
