Italian style Meatloaf for Super Bowl

Italian style Meatloaf for Super BowlI love meatloaf sandwiches and seriously what could be better for Super Bowl? Make this ahead of time and slice it and pre make sandwiches! I happen to love a soft roll so I would use a good quality potato roll! Sliced tomatoes, onion, ketchup and maybe some hot brown gravy and ketchup on the side. I promise this will make everyone happy, even if their team is losing!
You will need:

  • 2-tbs butter
  • 1/2 cup of minced onion
  • 1/2 cup celery minced
  • 1 Tbsp minced garlic
  • 1/4 cup carrot, minced
  • 2 teaspoon salt 
  • 1 teaspoon freshly ground black pepper
  • 1-tbs Worcestershire sauce
  • 2-tbs tomato paste
  • 1-lb ground beef
  • 1-lb ground turkey
  • 1/2 cup bread crumbs
  • 1 large egg beaten
  • 1/4 cup chopped fresh parsley leaves
  • An extra 2-tbs of tomato paste for the top of the meatloaf

Directions:

  1. Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced. If not just try to mince very fine with a knife.
  2. Take a skillet add the butter, salt and pepper and turn the heat to high and add this veggi mixture. Sauté this until translucent and soft about 5 minutes.
  3. In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand.
  4. Form into a loaf and place on a baking sheet or use a meatloaf pan.
  5. Spread the remaining 2- tbs of tomato paste on top.
  6. Place in a 375 degree pre heated oven until internal temperature reaches 160 degrees. Allow the meatloaf to rest for 10 minutes before serving.
