Italian style Meatloaf for Super Bowl
I love meatloaf sandwiches and seriously what could be better for Super Bowl? Make this ahead of time and slice it and pre make sandwiches! I happen to love a soft roll so I would use a good quality potato roll! Sliced tomatoes, onion, ketchup and maybe some hot brown gravy and ketchup on the side. I promise this will make everyone happy, even if their team is losing!
You will need:
- 2-tbs butter
- 1/2 cup of minced onion
- 1/2 cup celery minced
- 1 Tbsp minced garlic
- 1/4 cup carrot, minced
- 2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1-tbs Worcestershire sauce
- 2-tbs tomato paste
- 1-lb ground beef
- 1-lb ground turkey
- 1/2 cup bread crumbs
- 1 large egg beaten
- 1/4 cup chopped fresh parsley leaves
- An extra 2-tbs of tomato paste for the top of the meatloaf
Directions:
- Take the onion, garlic, carrot and celery and if you have one pulse it in a food processor until very minced. If not just try to mince very fine with a knife.
- Take a skillet add the butter, salt and pepper and turn the heat to high and add this veggi mixture. Sauté this until translucent and soft about 5 minutes.
- In a large bowl add all of the ingredients (except the extra tomato paste for the top of the meatloaf) and mix well by hand.
- Form into a loaf and place on a baking sheet or use a meatloaf pan.
- Spread the remaining 2- tbs of tomato paste on top.
- Place in a 375 degree pre heated oven until internal temperature reaches 160 degrees. Allow the meatloaf to rest for 10 minutes before serving.
