Spinach Meat Cheese Frittata
This is really simple to make and you can adjust the ingredients to use what you like. It will be enough for 6 people!
You will need:
- 8 large eggs
- 1 1/2 cups of half n half
- 2 cups of shredded cheese, cheddar, fontina, I used Comte.
- 1 cup chopped onion
- 4 ounces chopped capicolo, prosciutto or ham
- 2 cups fresh baby spinach
- 1 tbs extra virgin olive oil
- Salt
- Black pepper
Directions:
- Heat the olive oil in a large skillet and sauté the onion and the meat for a couple minutes then add the spinach and sauté until the spinach starts to wilt, cover with a lid and remove from the heat and set aside.
- In a mixing bowl beat the eggs, a pinch of salt and pepper and the half n half.
- I used a 9″ pie dish to make mine. Put some olive oil in the pie dish and rub all around to coat then place the spinach/onion/meat in the bottom of the dish and then layer the cheese on top.
- Pour the egg mixture in and place in a pre heated 375 degree oven.
- Cook 45-50 minutes then check to see if it is puffed up all across the top. It will look like the photo when it’s done.
