Grandma Pie

Grandma PieThis is how my Grandma would make pizza and it’s a style of pizza that is called “Grandma Pie” it’s made the reverse of what you might be used to. The cheese goes on the dough first then the sauce. It’s amazing.

You will need:

  • Sauce- 28 ounce can San Marzano tomatoes, 1 anchovy (optional), 1 garlic clove,
  • tsp salt, 5 fresh basil leaves all put into a blender and pulsed till smooth.
  • Pizza dough
  • Mozzarella sliced thin
  • Grated pecorino Romano cheese
  • 1/4 cup extra virgin olive oil

Directions:

  1. Put the olive oil in a sheet pan and spread to the ends and up the sides of the pan.
  2. Place the dough into the pan and spread all the way to the sides. If the dough resists let it sit in the pan for a couple minutes and continue.
  3. Once it it stretched to the sides, cover with plastic wrap and let sit for 30 minutes to rise.
  4. Preheat your oven to 450 degrees.
  5. First place the sliced mozzarella on the pizza then top with your sauce and sprinkle some romano cheese.
  6. Place into the oven for 20-30 minutes or until done.

Once you make this pizza you will probably never order one out.
