A Ricotta Dessert my Grandmother would make!
It would amaze me that my grandmother would take the very same ingredient she would use to make delicious ravioli or manicotti and make a delicious dessert with it. Ricotta is so good, so many ways.
Ingredients:
- 1 lb ricotta cheese
- 1/2 cup heavy cream, whipped into whip cream.
- 1 tsp of pure vanilla
- 1 tbs of sugar, more if you like a sweeter dessert
- Crushed chocolate
- Fresh strawberries, blueberries, blackberries or raspberries—0r a combination of all of them!
Directions:
- Drain the ricotta of as much liquid as possible by placing it in a strainer or cheese cloth and then place it over a bowl and into the fridge. I let mine drain for 8 hours or over night.
- When you are ready to prepare this dessert add the ricotta to a mixing bowl and whip it until it becomes creamy, a couple minutes, then add the whipped cream, vanilla and sugar and whip everything together.
- Place this back in the fridge to chill for 30 minutes.
- Serve with the berries and some crushed chocolate.
