Smashed Olive Oil Potatoes with Parsley

10269506_10152165815939891_8205967996790463932_nI love this recipe and I make it often. It’s so simple and incredibly delicious. Once you make your potatoes this way you may never use butter and cream again. The trick here is to use a really good quality Extra Virgin Olive oil.

Ingredients:

  • 2 pounds red potatoes
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 cup extra virgin olive oil
  • 2 tbsp extra virgin olive oil
  • 1/2 cup fresh chopped parsley

Directions:

  1. Preheat your oven to 450 degrees.
  2. Cut the potatoes into quarters and place on a lightly oiled heavy baking sheet and bake for 30-40 minutes or until done to your liking.
  3. Remove from oven and place the potatoes in bowl.
  4. Add the salt pepper, parsley and smash with a heavy fork while slowly adding the 1/2 cup of extra virgin olive oil.
