Smashed Olive Oil Potatoes with Parsley
I love this recipe and I make it often. It’s so simple and incredibly delicious. Once you make your potatoes this way you may never use butter and cream again. The trick here is to use a really good quality Extra Virgin Olive oil.
Ingredients:
- 2 pounds red potatoes
- 1 tsp salt
- 1 tsp ground black pepper
- 1/2 cup extra virgin olive oil
- 2 tbsp extra virgin olive oil
- 1/2 cup fresh chopped parsley
Directions:
- Preheat your oven to 450 degrees.
- Cut the potatoes into quarters and place on a lightly oiled heavy baking sheet and bake for 30-40 minutes or until done to your liking.
- Remove from oven and place the potatoes in bowl.
- Add the salt pepper, parsley and smash with a heavy fork while slowly adding the 1/2 cup of extra virgin olive oil.
