Vegetarian Split Pea Soup!
I love split pea soup and whats great about pea soup is if you decide not to soak them over night you can still make split pea soup, in a pinch!
If you choose not to soak them overnight then just put them in a pot with cold water bring it to a boil for 10 minutes, cover and remove from the heat and let sit for an hour.
You’ll need:
- 1-lb dry split green peas
- 1-large onion minced
- 2-carrots minced
- 4-garlic cloves minced
- 1-tsp of salt
- 1/2-tsp black pepper
- 1-tsp dry thyme
- 1-qt vegetable stock
- 1-bay leaf
- 2-stalks of celery chopped
- 2-tbs olive oil
- 2-cups of water
Directions:
- In a large pot add the oil, garlic, onion, celery, carrots, salt and pepper.
- Sauté this for 10 minutes on a low heat. Do not burn the garlic.
- Now add the stock, water, bay leaf, thyme and bring this to a boil.
- Add the peas and bring to a boil.
- Reduce to a simmer, cover and simmer on a low heat.
- If you soaked the peas then summer for an hour if you didn’t soak the peas summer for a couple hours.
- Once the peas are tender and breaking up, remove the bay leaf.
- You can either enjoy the soup as is or purée it.
