Turkey Meatloaf with an unexpected ingredient

meatloafIngredients:

  • 2 lbs ground turkey 50% white 50% dark meat. Or a blend u prefer
  • 1 cup chopped onion
  • 4 garlic cloves minced
  • 1/2 cup chopped parsley
  • 1 red bell pepper diced
  • 2 eggs
  • 1 cup canned prepared cannellini beans washed and drained
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 3 tbs tomato paste

Directions:

  1. In a large bowl, mix all the ingredients and 1 tbs of the tomato paste by hand until fully combined.
  2. Cover bowl with plastic wrap and let sit in the fridge for one hour.
  3. Pre heat your oven to 350 degrees. After the hour put the meatloaf mix into a 4×9 meatloaf pan or form it into a loaf and place in a baking dish.
  4. Top with remaining 2 tbs of the tomato paste and bake for about 45 min then check the temp you wanna see 165.
  5. Once it’s done remove it from the oven, cover with foil and let it sit for about 15 min before serving.

I love the addition of the beans and I use a lot of onion because they keep the turkey moist. This same mix can be used for amazing turkey burgers as well!
