Turkey Meatloaf with an unexpected ingredient
Ingredients:
- 2 lbs ground turkey 50% white 50% dark meat. Or a blend u prefer
- 1 cup chopped onion
- 4 garlic cloves minced
- 1/2 cup chopped parsley
- 1 red bell pepper diced
- 2 eggs
- 1 cup canned prepared cannellini beans washed and drained
- 2 tsp salt
- 2 tsp ground black pepper
- 3 tbs tomato paste
Directions:
- In a large bowl, mix all the ingredients and 1 tbs of the tomato paste by hand until fully combined.
- Cover bowl with plastic wrap and let sit in the fridge for one hour.
- Pre heat your oven to 350 degrees. After the hour put the meatloaf mix into a 4×9 meatloaf pan or form it into a loaf and place in a baking dish.
- Top with remaining 2 tbs of the tomato paste and bake for about 45 min then check the temp you wanna see 165.
- Once it’s done remove it from the oven, cover with foil and let it sit for about 15 min before serving.
I love the addition of the beans and I use a lot of onion because they keep the turkey moist. This same mix can be used for amazing turkey burgers as well!
