String Bean Marinara
Wow, I love this recipe! If you have never had string bean marinara give this a try. I think this is as rustic Italian as it gets. This dish can be served hot or room temperature. Just before you serve the string beans, drizzle with a little extra virgin olive oil.
You’ll need:
- 1.5-2 lbs string beans cleaned and cut in half
- 2-tbs extra virgin olive oil
- 1-28 ounce can of whole Italian plum tomatoes crushed by had, San Marzano if you can get them.
- 6-garlic cloves cleaned and sliced
- Salt
- 1/2 tsp crushed red pepper flakes
Directions:
- Blanch the beans in a pot of boiling water for 2 minutes, drain and set aside.
- In a large skillet add the olive oil, garlic and red pepper flakes. Allow this to sauté for 2 minutes.
- Add the crushed tomatoes, salt and bring to a boil. Continue to cook for 10 minutes.
- Add the beans and toss everything together.
- Cook the beans in the tomatoes for 10 minutes while tossing everything together.
- Serve.
