Stracciatella – Italian Egg Drop Soup
Feeling a little under the weather? Make this simple but so good for you, Italian Egg Drop Soup. Grandma always made this, a couple ingredients and a few minutes is all that’s needed. I took a close up so you can see what the cooked egg looks like.
You will need:
- 1 Qt chicken broth
- 1 chicken breast poached & shredded(optional)
- 2 extra large eggs
- 2 tbs grated romano cheese
Directions:
- Bring the broth to a boil and add the shredded chicken, lower to a simmer.
- Beat the eggs with the cheese, in a bowl.
- While whisking the broth slowly pour the egg mixture into the broth (transferring the mixture to a large measuring cup with a spout makes this easier). As you pour, keep whisking the broth to slowly cook the egg mixture. That’s it.
You can add spinach, pasta and even make this without the chicken.
