Spinach Omelet
Spinach Omelet Breakfast, Lunch or Dinner Sandwich
For some reason every Monday morning I have a nice piece of bread left over from Sundays dinner. And what better way to not let it go to waste then to make a delicious egg sandwich with it.
You’ll need:
- Some chopped onion, use as much as you like
- Baby spinach,a good handful
- 2 eggs scrambled
- 1 tablespoon of grated Romano cheese
- 1 tablespoon milk, half n half or heavy cream
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
- Butter
- Some nice Italian or French bread, left over from Sundays dinner
Directions:
In a bowl scramble the eggs with the milk, cheese, salt n pepper- In a small skillet heat the olive oil and once hot add the onion and spinach
- Sauté until the spinach is wilted and the onion is translucent this will take 2 minutes
- Add the egg mixture and mix everything together
- Using a fork and starting from the edge pull the egg mixture to the center of the skillet
- Do this a couple times and allow the omelet to cook for a couple minutes until it is mostly cooked through
- Top with the grated cheese, remove the skillet from the heat and cover tightly
- Allow this to sit for 5 minutes the omelet will continue to cook
I brush a little butter on my bread and toast it. Remove the omelet from the skillet and make your sandwich. So good!
