Spaghetti with Pancetta
You’ll need:
- 1-lb of spaghetti cooked 2 minutes short of recommended time
- 1/2-lb of pancetta cut into small pieces
- 1/4-cup of extra virgin olive oil more for the finish
- 2-tbs of butter
- 2-Garlic cloves sliced
- 1 pinch of red pepper flakes
- 2-cups of the pasta water
- Fresh grated Parmesan cheese
Directions:
- In a large skillet add half the olive oil and cook the pancetta till the fat is rendered
- Add the garlic and red pepper flakes and butter
- Sauté on low heat for 1-2 minutes
- Add the cooked pasta to the skillet with one cup of the pasta water
- Start tossing and folding the pasta into the sauce, add more water if needed
- Remove from the heat and slowly add 1/2 cup of grated Parmesan cheese and fold into the pasta.
Serve with a drizzle of olive oil and more cheese
