Shrimp Scampi with Linguini
Another really simple dish to make.
You’ll need:
- 6-tbs unsalted butter
- 4-tbs extra virgin olive oil
- 2-shallots minced
- 4-cloves garlic minced
- 1 pound shrimp peeled, deveined
- Salt and black pepper
- 1/2-cup dry white wine
- Juice of one fresh lemon
- 1/4-cup chopped parsley
- 1-lb of linguini prepared
Directions:
- Heat a skillet and add 2 tbs olive oil and 2 tbs butter and sauté the shallot at garlic for 2 minutes
- Season the shrimp with salt and pepper and sauté the shrimp until the are pink. Remove the shrimp to a plate.
- Add the wine and lemon juice and bring to a boil.
- Add the balance of the butter and when the butter is melted add the shrimp, prepared pasta, parsley and toss everything together.
- Taste for salt and pepper, adjust and serve.
