Sausage, Peppers, Onions and Potatoes
This is my recipe for this “RUSTIC” Italian comfort food all in one cast iron skillet. Simple and delicious.
Serves 6 people and is ready in 1 hour start to finish.
You’ll need:
- 1-2lbs Italian sweet sausage cut into 2″ pieces
- 2-large red onions quartered
- 1 red, 1 yellow and 1 orange bell peppers cleaned and cut into big pieces
- 4-Small to medium red potatoes quartered then cut in half
- Extra virgin olive oil
- Salt n pepper
Directions:
- Preheat the oven to 400 degrees
- Place the skillet on the stove on high heat
- Once the skillet is hot add 2-tbs oil and the potatoes, pinch of salt and pepper
- With a spoon, toss the potatoes in the oil to coat and brown them for 5 minutes
- Add the onions, peppers and sausage, drizzle 1/4 cup of oil and season with salt n pepper
- Toss again with the spoon to coat everything with the oil
- Using oven proof mitts place the skillet in the oven
- After 15 minutes, toss everything
- At 30 minutes, check to see if the sausage is done
- Once the sausage is done remove the skillet and let rest for minutes.
- Toss and serve
A crusty Italian bread is all that’s needed for this dish.
