Rigatoni with Zucchini, Butter and Cheese
“Simple cooking is the best cooking”
You’ll need:
- 1-Zucchini
- 1-lb of rigatoni
- 4-tbs of butter
- 1/2-cup grated Pecorino or Parmesan
- Salt
- Red pepper flakes
- Extra virgin olive oil
Directions:
- Zucchini cubed and sautéed in a skillet with a little olive oil, pinch of salt and a pinch of red pepper flakes for 2 minutes
- Cook the rigatoni 2 min short of recommended time save 1 cup of
pasta water and strain pasta - Add the pasta with the butter to a warm bowl (add hot water to the bowl let sit, drain and dry with a towel)
- Toss with 1/2 cup of fresh grated Parmesan or Pecorino
- Add 1/2 cup of the pasta water and continue tossing to create a creamy sauce. Add more pasta water if needed.
Serve with a drizzle of extra virgin olive oil and a sprinkle of cheese. I love this simple quick “old school” recipe. Give it a try and you’ll fall in love with it too.
