Red sauce with Broccoli di Rabe and Pasta
I was asked if I would use broccoli di rabe in a red sauce, yes and here it is.
Directions:
- cut the tough ends off the broccoli di rabe
- Add the broccoli di rabe to a large pot of boiling water for 3-5 minutes then using tongs to save the water for the pasta remove it and immediately put it into a ice bath to stop the cooking. After its chilled chop it up and set it aside.
- In a large skillet add your red sauce and heat it up and allow it to simmer on a low heat.
- In the pot of boiling water, add your pasta and in this case orecchiette cook it and strain it just 2 minutes short of the recommended cooking time.
- Add the broccoli di rabe and pasta to the skillet of sauce.
- Sauté this for about 2 minutes.
- DONE! Top with pecorino Romano cheese and a drizzle of extra virgin olive oil!
