Lentil Soup

If you love lentils like I do then this recipe is for you. I add spinach at the end but if you’re not a fan then leave it out.

Ingredients

  • 1-qt vegetable or chicken stock
  • 1/2-cup of lentils, rinsed
  • 1/2-cup chopped fresh tomato
  • 1-small red potato diced
  • 1/3-cup of chopped onion.
  • 2-garlic cloves sliced
  • 2-cups fresh spinach
  • 1/2-tsp black cracked pepper
  • 2-tbs olive oil
  • 1-cup water

Directions

Heat the olive oil in a heavy pot.

Add the potato, onion, garlic, carrots.

Sauté for 5 minutes on low heat.

Add the stock, water bring this to a boil.

Cover and simmer for 15 minutes.

Add the lentils and stir lower the heat to simmer, cover and cook for 20 minutes.

After 20 minutes taste to be sure the lentils are tender if not then simmer longer.

When the lentils are done add the spinach fold it into the soup cover and simmer for 2 minutes.

Serve with a drizzle of olive oil.
