Ravioli with a Simple Rustic Chunky Sauce
A simple rustic tomato sauce goes really well with Sunday ravioli!! Less time in the kitchen and more time with family and friends is the key to this dish. And I guarantee everyone will love it!
You’ll need:
- 1-28 oz can whole San Marzano tomatoes
- 1/2 cup chopped onion
- 2-chopped garlic cloves
- 1-tbs extra virgin olive oil
- 1/2-tsp dry oregano
- 1/2 tsp salt
- 4-tbs butter
Directions:
- Add the oil, garlic and onion to a large 12″ skillet
- Allow this to slowly sauté for 10 minutes
- Crush the tomatoes by hand add then tomatoes all the juice, oregano and butter to the skillet
- Put the heat to medium and let it come to a slow boil
- Lower the heat to simmer and simmer for 20 minutes, uncovered
- Cook your ravioli in a large pot of salted water 2 minutes short of recommended time
- Add the ravioli to the skillet and allow it to slowly finish cooking in the sauce. Spoon the sauce onto the ravioli as it finishes cooking.
Top with grated Romano or Parmesan cheese, a drizzle of extra virgin olive oil and serve directly from the skillet. Why from the skillet? It’s a Sunday family and friends dinner. On the side a nice salad would be perfect and some rustic Italian bread.
