Pea Soup with Ham
As the holidays come to a close and the new year begins, we find ourselves with TONS of food in our refridgerators!!
A great way to enjoy leftover ham is in pea soup! I add a couple fresh ingredients, add some chopped up ham and some croutons and Voila! With the winter weather in full blast, this soup will be sure to hit the spot!
Ingredients
- 4 tablespoons butter
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup diced potatoes
- 1 cup chopped carrots
- 2 cloves sliced garlic
- 2 quarts of chicken stock
- 1 cup cold water
- 1 pound dried split peas washed and and stones removed
- 2 cup of diced ham (I have to use up this ham!)
- Some nice quality salt and fresh ground pepper
Directions
- Melt the butter in a large soup pot and add the potatoes, celery, onion, carrots and cook this for about 10 minutes then add the garlic and sauté for 30 seconds.
- Add the chicken stock, water and the peas and simmer this for about 1 hour partially covered until peas are tender.
- Taste for salt and pepper and add accordingly.
- Left over Italian bread can be used for croutons. Simply cube the bread and toast it in a hot skillet with a little olive oil, salt and pepper.
- Add the croutons to the rest of the soup and enjoy!
