Panzerotti “Forgots”
This past summer I traveled to the Puglia region of Italy, my Grandmother’s hometown. Along with every other dish I grew up on, I had Panzerotti and a lot of them. On Friday evenings back in Brooklyn my Grandmother would make what I call “Forgots”. Why were they called “Forgots”? Simply because every time my Grandmother was making Panzerotti, I would say “Grandma I forgot what they are called”. So she eventually said, ok they are “Forgots”. And that is what I have called them ever since. This past summer I had Panzerotti (Forgots) in her town in Italy. It connected all the dots and brought this delicious fried dough pocket full circle for me and brought back so many wonderful memories. Here is the recipe for “Forgots” and just like every item I make available from Mama Mancini’s in your local market, each one is made with real ingredients and a has a story attached to it.
You will need:
- Pizza dough
- Mozzarella cheese
- Tomato sauce
- Romano cheese
- Vegetable oil for frying
Directions:
- In a heavy skillet or pot pour a couple inches of oil and get your oil to 350 degrees, best to use a thermometer and try to maintain a 275-325 temp.
- On a floured surface take pieces of the dough and make small pizza’s about the size of a salad plate, 6″.
- On one side put some mozzarella, sauce and a little Romano cheese.
- Dip your fingers in water and wet the edge of the dough and fold in half and press the edges together. Similar to a calzone making sure the Panzerotti is completely sealed. You can also pinch and fold the edges if you like.
- Now place a couple at a time in the hot oil and fry them to a golden brown flipping to fry the other side.
- Place the fried Panzerotti on a paper-lined tray to drain and cool a little before enjoying.
Make my Panzerotti once and it will become a Friday night tradition. Make it more than once and you can call them “Forgots”
