Orzo Salad
Perfect as a side or just as a light dinner. Dang I love summer.
You’ll need:
- 1 lb orzo
- 1/ chopped red bell pepper
- 1/4 chopped red onion
- 2 garlic cloves minced
- 1/2 cup crumbled feta cheese
- Extra virgin olive oil
- Red wine vinegar
- 1 tsp salt
- 1 tsp cracked black pepper
- Juice of one lemon
- 2 cups baby arugula
Directions:
- Cook the orzo strain and put in a bowl.
- Add 1/2 cup olive oil and 1/4 cup of red wine vinegar and toss with all the ingredients except the arugula.
- Place in the fridge covered with plastic wrap and allow this to chill for a couple hours. Right before you serve the salad add the arugula, lemon juice and toss.
