Orzo Salad
Perfect for any BBQ! Tonight we are having burgers so an orzo salad is gonna be delicious.
You will need:
- 1-lb orzo
- 1/2 cup chopped red bell peppers
- 1/4 chopped onion
- 2 garlic cloves minced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped roasted peppers
- extra virgin olive oil
- red wine vinegar
- 1 tsp salt
- 1 tsp cracked black pepper
- 2 cups baby arugula
Directions:
- Cook the orzo strain and put in a bowl.
- Add 1/4 cup olive oil toss and place in the fridge.
- After 15 minutes remove from the fridge and add 1/4 cup olive oil and 1/4 cup of vinegar and toss with all the ingredients except the arugula.
- Place back in the fridge covered with plastic wrap and allow this to chill for a couple hours.
- Right before you serve the salad add the arugula and toss. If you want you could also add more dressing.
