Orecchiette with Sausage and Radicchio
I think we all look at radicchio in the market and say “what can I do with that?” I know I do. Well this is a recipe that radicchio adds a nice flavor and finish too.
You’ll need:
- 1-lb of orecchiette pasta
- Olive oil
- 1-lb of Italian sweet sausage, meat removed from the casing.
- 4-6 garlic cloves sliced
- 2-cups of chopped radicchio
- 2-cups of chicken stock
- 1-tsp red pepper flakes
- 1cup of pasta water
- Salt
- Black pepper
- 1/4-grated pecorino Romano cheese
Directions:
- Cook the pasta 2-minutes short of recommended time, reserve 1-cup of pasta water
- In a large skillet add 2-tbs of olive and put the heat to medium.
- Add the garlic, red pepper flakes and the sausage
- Cook the sausage breaking it up with a spoon 5-minutes
- Add the chicken stock, bring to a boil and simmer for 10 minutes.
- Add the pasta, the 1-cup of pasta water and finish cooking the pasta in the sauce for 2 minutes on a medium heat.
- Remove from the heat, wait 1 minute and fold the grated cheese into the pasta
- Serve topped with the radicchio, drizzle of olive oil and more grated cheese
