My preferred way of cooking a burger.
Everyone has a special way to cook the burger. This is how I prefer mine to be cooked. Unless I am having a outdoor big BBQ, this is the only way I cook them.
- I use an 80-20 or 75-25 beef-fat grind.
- I make my burgers (I don’t do the dimple thing) and I sprinkle salt and pepper on each side.
- They sit for about 15 minutes at room temperature while my heavy cast iron griddle, not grill, gets hot (indoor on the stove or outdoor on the grill).
- I flip them once. The ones that are gonna be well go on first the medium/rare last. If I am adding cheese I do that 30 seconds before they are done and I pour a little water on the griddle and put a pot cover over it to let the steam melt the cheese.
- That’s it. I remove them and let them sit for about 2 minutes.
I don’t add all kinds of stuff to the meat but I do make a bunch of toppings if someone wants to add that they can. Me, I like ketchup, raw onion chopped, a slice of pickle. Oh and a plain simple hamburger bun. Soooo gooood.
