Mashed candied Sweet Potatoes
Holidays are around the corner and I am gonna start getting some great holiday recipes up. I love this recipe and I eat it all year long. Read my ingredients, who wouldn’t love this candied sweet potato dish?
You’ll need:
- 2 pounds sweet potatoes peeled and cut into 1/2″ pieces
- 1/2 stick un salted butter
- 1/2 cup brown sugar
- 1/2 cup maple syrup
- Zest of one orange
- 2 cinnamon sticks
- 1/2 tsp salt
Directions:
- Pre heat your oven to 400 degrees.
- In a large skillet on medium heat melt the butter then add the brown sugar, zest, cinnamon sticks and syrup. Using a whisk mix this all together.
- Add the sweet potatoes, salt and turn to fully coat the potatoes. Allow this to come to a boil and cook for 10 minutes.
- Mix it all together again.
- Place the skillet into the oven for 45 minutes turning everything together every 15 minutes.
- Carefully remove the skillet and take out the cinnamon sticks.
- Place everything into a bowl being sure to scrape all the syrup in the bowl as well.
- Use a mixer to mash everything together.
