Marinated Chicken
Here is my recipe for a delicious marinated chicken. You can grill this on a BBQ, or bake in an oven.
You’ll need
- 1/2 cup chopped cilantro.
- 1/2 cup chopped onion
- 4 garlic cloves minced
- 1/4 cup canola oil
- 1 tbs minced jalapeño or habanero pepper
- 1 tsp salt
- 1 tsp cracked black pepper
- 3 lb chicken bone in and skin off parts of your choice.
Directions:
- Place the marinade and the chicken into a large zip bag remove all the air and refrigerate for 4-8 hours
- Heat your grill to high
- Remove the chicken from the marinade and just sprinkle a little salt on all sides then sear the chicken on each side for 2-minutes then lower the heat to low and continue to cook the chicken with the lid closed till done, flipping along the way
- Look for a internal temp of 165 degrees
- Remove the chicken to a platter and let rest for 10 minutes
- Top with some chopped cilantro and a squeeze of lime
- Lime slices on the side
