MamaMancini’s Smashed Potatoes
Mashed potatoes are undeniably a comfort food. They can be the perfect side to any hearty dish, or eaten alone as a warm and flavorful meal. These smashed potatoes provide a nostalgic flavor that will bring anyone back to a time when Grandma was cooking you dinner after school. For me, these memories are my recipe vault. And I want to make sure that you can create these memories with your family.
Ingredients
– 2 lbs small red potatoes
– ¼ cup olive oil
– 1 onion, chopped
– 4 garlic cloves, minced
– 2 tbs shredded Romano or Parmesan cheese
– 2 tbs fresh flat-leaf parsley, chopped
– 1 tsp salt
Directions
Boil water in large pot. Wash and chop potatoes into 2-inch cubes. (Peel is optional.) Boil potatoes until soft (approximately 30 minutes). Drain and transfer to large saucepan. Set aside.
Heat olive oil over medium-high heat. Sautee onion and garlic until onion is soft (approximately 7 minutes). Pour mixture over potatoes in saucepan. Use a potato masher to slightly “smash” the potatoes. (Do not “over mash”.)
Sprinkle cheese, parsley, and salt over dish. Mash again. Serve.
