Macaroni with Grandma Sauce and Sausage
I love recipes that I can read in a minute and understand it. That’s the way I love to cook.
You’ll need:
- 1 lb of Italian sweet sausages removed from the casing, cut into 1″ pieces.
- 1 28 ounce can of Italian plum tomatoes crushed by hand
- 4 cloves of garlic sliced
- 1/2 cup sliced onion
- 1 tsp of crushed red pepper flakes
- 1 tsp salt
- 5 fresh basil leaves (optional)
- 2 tbs extra virgin olive oil
- 1 lb of penne pasta or your favorite cut
Directions:
- Get a large pot of salted water boiling for the pasta
- In a large skillet, heat the olive oil and toss in the garlic, onion, pepper flakes and sausage
- Once the sausage is browned add the tomatoes with all the juice and the 1 tsp of salt
- Stir everything together and simmer uncovered on a low boil for 15 minutes
- At this point add the basil leaves and stir into the sauce and turn off the heat
- Cook your pasta 2 minutes short of recommended time, strain and add the pasta to the sauce
- Put the heat on medium
- Fold the pasta into the sauce for the remaining 2 minutes to finish cooking the pasta
- Top with grated pecorino romano cheese and a drizzle of extra virgin olive oil
