Mac and Cheese Stuffed Peppers

This is a winner!

 

You’ll need:

  • 1 meatball crushed into 4 ounces of sauce mixed with
  • 1/2 cup ricotta
  • 1/4 cup shredded mozzarella
  • 2 tbs grated romano or parmesan cheese
  • 1 cup dry elbow macaroni cooked
  • Stuff 2 large peppers

 

Directions:

  1. Cut the top off the peppers and clean the seeds and ribs from inside
  2. Place the peppers in a pot of boiling water for 5 minutes
  3. Remove and let drain
  4. Crush the meatball into the sauce and add the balance of the ingredients
  5. Mix everything together and stuff the peppers
  6. Place the peppers in a 350 degree pre-heated oven for 30-minutes
  7. Remove and let rest for 5 minutes before serving
  8. Top with a drizzle of olive oil and some grated cheese
