Mac and Cheese Stuffed Peppers
This is a winner!
You’ll need:
- 1 meatball crushed into 4 ounces of sauce mixed with
- 1/2 cup ricotta
- 1/4 cup shredded mozzarella
- 2 tbs grated romano or parmesan cheese
- 1 cup dry elbow macaroni cooked
- Stuff 2 large peppers
Directions:
- Cut the top off the peppers and clean the seeds and ribs from inside
- Place the peppers in a pot of boiling water for 5 minutes
- Remove and let drain
- Crush the meatball into the sauce and add the balance of the ingredients
- Mix everything together and stuff the peppers
- Place the peppers in a 350 degree pre-heated oven for 30-minutes
- Remove and let rest for 5 minutes before serving
- Top with a drizzle of olive oil and some grated cheese
