July 4th Grilled Eggplant
Ingredients:
1 large eggplant cut into
- 1″ slices
- 1 lb ricotta cheese
- Extra virgin olive oil
- Salt
- Fresh Cracked black pepper
- 1/4 cup grated pecorino Romano cheese
- 1 cup shredded •provolone cheese
- Chopped fresh basil
- 1 pack of Mama Mancini beef or turkey meatballs and sauce or your own but mine will make your life easier.
- 6 buns
Directions:
- Heat your grill to a medium heat.
- In a bowl add the ricotta cheese, Romano cheese a tsp of salt, tsp of black pepper and a tbs of extra virgin olive oil and mix all this together.
- Crush the meatballs into the sauce and heat in a pan.
- Take the eggplant slices and brush both sides with olive oil and a sprinkle of salt. Place the eggplant slices on the grill. You are going to let this go for about 3-5 minutes depending on how hot your grill is.
- Now flip them and take a flat knife and spread about 2 tbs of the ricotta mixture on each of the eggplant slices. Cook another 3-5 minutes.
- Remove and place on a bun and top with the crushed meatballs and sauce, shredded provolone cheese and some of the chopped basil!
I made these today for WUSA9 news….they devoured them!
