July 4th Grilled Eggplant

Ingredients:

1 large eggplant cut into

  • 1″ slices
  • 1 lb ricotta cheese
  • Extra virgin olive oil
  • Salt
  • Fresh Cracked black pepper
  • 1/4 cup grated pecorino Romano cheese
  • 1 cup shredded •provolone cheese
  • Chopped fresh basil
  • 1 pack of Mama Mancini beef or turkey meatballs and sauce or your own but mine will make your life easier.
  • 6 buns

Directions:

  1. Heat your grill to a medium heat.
  2. In a bowl add the ricotta cheese, Romano cheese a tsp of salt, tsp of black pepper and a tbs of extra virgin olive oil and mix all this together.
  3. Crush the meatballs into the sauce and heat in a pan.
  4. Take the eggplant slices and brush both sides with olive oil and a sprinkle of salt. Place the eggplant slices on the grill. You are going to let this go for about 3-5 minutes depending on how hot your grill is.
  5. Now flip them and take a flat knife and spread about 2 tbs of the ricotta mixture on each of the eggplant slices. Cook another 3-5 minutes.
  6. Remove and place on a bun and top with the crushed meatballs and sauce, shredded provolone cheese and some of the chopped basil!

I made these today for WUSA9 news….they devoured them!
