Italian Baby Back Ribs

For this recipe we forget the all day cooking on a low heat, the slow smoked for 24 hours, all the secret rubs, marinating for a day, all the sauces and yes… the fall off the bone finish. However with my recipe, we celebrate the wonderful flavor of the Pork Baby Back Rib. And let me tell you, it’s delicious.

Directions:

  1. Dry the ribs with paper towel
  2. Mince a garlic clove and rub all over the ribs
  3. Drizzle the ribs with extra virgin olive oil
  4. Season with some salt n pepper
  5. Lay several rosemary sprigs on the ribs
  6. Roast in a pre heated 350 degree oven for 1.5 hours
  7. Remove the sprigs let rest and serve.

Two large racks of oven-roasted ribs, prepared using Dan Mancini's recipe, are placed on a parchment-lined baking sheet. The ribs have a golden brown crust and are garnished with fresh sprigs of rosemary. The surface shows a crispy texture with some browned edges.
