Holiday Struffoli
I have gotten requests for a Struffoli recipe. I contacted my friend Chris from QED Cooks on PBS Food. He has agreed to share his Mom’s recipe with me.
He just got back from Rome Italy and tried the Struffoli at Linari Pasticceria. He said, “They were good but not as good as my mom’!.” No surprise to me! Thank you Chris for sharing your Mom’s recipe!
Ingredients:
- 2 cups sifted flour
- 1/4 teaspoon salt
- 3 eggs
- 1/2 teaspoon vanilla
- 1 cup honey
- 1 tablespoon sugar
- Colored decorating candies
Directions:
- Sift together the flour and salt.
- Add the eggs one at a time and then the vanilla.
- Turn the dough onto a floured board and knead until smooth.
- Divide the dough in half. Roll each half 1/4 inch thick. Cut into strips 1/4″ wide.
- Roll each strip into pencil thin log. Cut into 1/4 inch pieces.
- Fry in batches until lightly browned. Drain on paper towels.
- Heat honey and sugar on low for 5 minutes.
- Remove from heat and add the fried pieces. Stir until they are all coated.
- Remove with a slotted spoon and mound onto a serving dish.
- Let cool in fridge until firm and then sprinkle with colored decorating candies. You can also decorate with candied cherries, orange peel and toasted hazelnuts.
