Grilling Chicken Fajitas
Could it get simpler than this? I love grilled Fajitas/tacos and I like keeping it simple. Here I skipped marinades and I am leaving the flavors to these amazing grilled vegetables!
You’ll need:
- Boneless skinless chicken breast dried with a paper towel then brushed with a little vegetable oil and salted and peppered
- Pablano peppers, red onion, roma tomatoes, jalapeño peppers all cleaned, sliced and brushed with a little vegetable oil and salted n peppered
- Corn tortillas
Directions:
- Heat the grill to high and grill everything till done
- The chicken I took off when internal temp hit 170 degrees
- The veggies I grilled till charred
- The tomatoes can get a little soft so I only turn them once
- I sliced the chicken as well as all the veggies and served right from the cutting board
I grilled the tortillas till warmed through! Chips and salsa on the side with some hot sauce. You can use any vegetable you would like! It’s all good.
