Grilled Eggplant n Meatballs On A Bun
I got a lot of requests for this recipe since I showed it on QVC this week. It’s easy to make and it’s even easier if you have my Mama Mancini meatballs n sauce.
You’ll need:
- 1 eggplant cut into 1/2″ rings
- Olive oil
- Ricotta cheese
- Shredded or sliced mozzarella cheese
- Heated meatballs n sauce
- Grated Romano cheese or Parmesan
- Salt n pepper
- Chopped fresh basil (optional)
Directions:
- Brush both sides of the eggplant slices with the olive oil and sprinkle some salt n pepper on them
- Place them on a hot grill
- After 5 minutes flip them, the underside should be done
- On the grilled side place some sliced heated meatballs n sauce, a scoop of ricotta cheese, mozzarella cheese and close the BBQ lid
- After about 5 minutes check to be sure they are done, they should be (if not let them go for a couple more minutes)
- When done, remove the eggplant meatball parm to either a plate to enjoy or on a bun
- Top with more hot sauce, drizzle of olive oil and some grated cheese and if you have the basil add some
