Grilled Chicken Cutlet with Broccoli di Rabe and a Squeeze of Fresh Lemon
Simple, delicious and ready in a couple minutes.
You will need
- pounded cutlets
- broccoli di rabe or broccoli with the tough ends cut off
- lemon wedges
- salt
- black cracked
- pepper
- extra virgin olive oil
Directions
- Bring a large pot of water to a boil and cook the rabe for 5 minutes. Remove to a plate.
- Now while you are heating your grill pan, dry the chicken with paper towels then brush olive oil on both sides and salt n pepper. Place on the hot grill pan for just a few minutes per side.
- Pounded cutlets cook very fast and will continue to cook when u remove them to a plate to rest, which is what you need to do once they are done.
- While they are resting add a tbs of olive oil to a hot sauté pan and sauté the broccoli do rabe for a couple minutes. Remove the rabe to a platter and place the chicken on top and give it a squeeze of lemon and a drizzle of olive oil.
- Serve with lemon wedges on the side.
