Grandma’s Penne with Garlic and Prosciutto
This dish comes together quickly and we are gonna use just a couple ingredients….the results are amazing.
You’ll need:
- 1-lb of penne pasta cooked 2 min short of recommended time
- 4-oz prosciutto sliced thin then cut into small strips
- 2-tbs extra virgin olive oil and more for the drizzle
- 1/2-tsp crushed red pepper flakes
- 4-garlic cloves sliced thin
- Salt
- Black cracked pepper
- 1/4-cup chopped fresh parsley
- 1-cup pasta water
- 1/2-cup grated Parmigiano-Reggiano cheese
Directions:
- In a 12″ skillet sauté the garlic, red pepper, 1/2 tsp salt, 1/4 tsp black pepper and the red pepper flakes in the olive oil until the garlic becomes light golden in color.
- Add the prosciutto and toss with the garlic for 30 seconds.
- Add the pasta that has been cooked two min short of recommended time.
- Add the cup of pasta water and on a medium heat toss the pasta to finish cooking.
- Remove the skillet from the heat, add the cheese and continue tossing the pasta in the cheese to create a creamy sauce. Add more pasta water a little at a time if needed.
- Drizzle on some extra virgin olive oil and toss with the parsley and serve.
I love this dish and it’s so simple to make…..what’s not to love. Don’t forget not to over cook the pasta.
