Garlic Chicken
The recipe is gonna sound like you’re using a lot of garlic but the recipe is done the garlic actually will have taken on a sweet taste. It’s just a good chicken recipe.
You’ll need:
1-whole chicken cut into 8 parts
2-tbs of olive oil
1/2 cup of white wine, dry not sweet
1-tsp of dry oregano
Salt
Pepper
3-heads of garlic broken apart with skin left on
1-tbs of butter
1/4 cup chicken stock
1-tsp lemon juice
Directions:
- Make sure the chicken is dry, if need be dry the parts with paper towels and place on a plate in the fridge for an hour.
- Season the chicken with salt and pepper and in a Dutch Oven or heavy pot with a lid heat the oil and brown all the chicken parts to a golden brown.
- Remove the chicken to a plate.
- Add the garlic and sauté until the garlic is a golden brown. This will take about 5-6 minutes.
- Add the wine and deglaze all the brown bits off the pot. Use a wooden spoon that will work best.
- Reduce the wine by half.
- Add the chicken stock and bring to a boil.
- Add the chicken to the pot with the oregano.
- Cover and cook until the chicken is done. This will take 30-40 min.
- When the chicken is done remove it to a plate.
- Add the lemon juice to the pot.
- Smash the garlic into the sauce then strain the sauce into a small pot and
discard the garlic. - Bring the sauce to a boil and add the butter and reduce by half.
- Pour the sauce over the chicken and serve.
This recipe is incredible….have some bread ready to sop up the sauce, it’s amazing.
