Frittata for Brunch
This frittata is amazing. I guess anything with bacon is amazing but this frittata…..is amazing.
You will need:
- 2 tablespoons olive oil
- 1 cup diced potatoes
- 4 strips of bacon
- 2 garlic cloves minced
- 2 tbs chopped chives
- 2 cups fresh baby spinach
- 4 large eggs
- 2 tbs half n half
- 1/2 cup shredded cheddar cheese
Directions:
- Preheat the oven to 400 degrees.
- Scrabble the eggs and half n half together and set aside.
- Using a 12″ skillet cook the bacon till crisp. Remove with a slotted spoon and put in a bowl.
- Add the potatoes, garlic and chives to the skillet in the bacon fat and brown for 3 minutes. Cover and let cook for 3-5 more minutes. Remove and add to the bowl with the bacon.
- Put the spinach in the skillet and cook till wilted this will take 1-2 minutes.
- Add the potatoes and bacon back to the skillet and pour the eggs into the skillet and on a medium heat using a fork mix everything together. Allow this to sit on for 2 minutes on the medium heat.
- Place the skillet in the oven for about 10 minutes, or until the frittata is firm and golden brown.
- Remove from the oven, and sprinkle shredded cheese over the top. Return to the oven for about 5 minutes, or until cheese is melted.
