Eggplant Meatball Sandwiches
I made these a year ago on a News Show and the response was crazy so I figured you might like to try this recipe. Saying this is delicious is a understatement. It’s mind blowing delicious smile emoticon
You will need:
- 1 large eggplant cut into 1″ slices
- 1-lb ricotta cheese
- Extra virgin olive oil
- 1/4 cup grated pecorino Romano cheese
- 1- cup shredded provolone cheese or Mozzarella
- Chopped fresh basil
- 1 pack of Mama Mancini beef or turkey meatballs and sauce or your own but mine will make your life easier smile emoticon
- Rolls
- 1 tsp Salt
Directions:
- Pre heat your oven to 400 degrees.
- In a bowl add the ricotta cheese, Romano cheese, salt and a tbs of extra virgin olive oil and mix all this together.
- In a small pot crush the meatballs into the sauce and heat.
- Take the eggplant slices and brush both sides with olive oil.
- Place the eggplant slices on a baking sheet and place in the oven. You are gonna let this go for about 5 minutes or until the underside is golden brown and the eggplant begins to cook through.
- Flip and top each eggplant slice with crushed meatballs and sauce then the ricotta cheese mixture and finally some of the provolone or mozzarella cheese.
- Place back into the oven to melt the cheese and finish cooking the eggplant 10 minutes or until the eggplant if fully cooked.
- Remove from the oven and place a eggplant slice on each of your rolls, finish with a drizzle of olive oil and some fresh basil.
You can use any bread of your choice or serve as is. So good. I promise.
