Delicious Scallop Ceviche
In South Orange, NJ there was a great restaurant called Above. I loved this place—the food was amazing, and it had a really nice vibe. You could order anything from a gourmet meal or a great burger to amazing sushi.
When I dined at Above, I would ask Mario, the manager, to make me their amazing Scallop Ceviche. Yes, that keeps me there for a couple hours unless I call him ahead of time. I asked Mario if he would consider sharing the recipe with me for all my fans, and being the nice guy that he is, he agreed!
Here’s Mario’s recipe:
Ingredients
- 1lb scallops cut into bite size pieces
- 8 limes juiced
- 2 tomatoes diced juice removed
- 5 scallions minced
- 1/2 green bell pepper minced
- 1/2 cup of parsley chopped
- 1/8 cup cilantro chopped
- 1 1/2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Directions
- Mix all the ingredients in a bowl
- Place in the refrigerator for 2 hours
- Serve with a garnish of sliced avocado and a orange slice
