Delicious Scallop Ceviche

In South Orange, NJ there was a great restaurant called Above. I loved this place—the food was amazing, and it had a really nice vibe. You could order anything from a gourmet meal or a great burger to amazing sushi.

When I dined at Above,  I would ask Mario, the manager, to make me their amazing Scallop Ceviche. Yes, that keeps me there for a couple hours unless I call him ahead of time. I asked Mario if he would consider sharing the recipe with me for all my fans, and being the nice guy that he is, he agreed!

Here’s Mario’s recipe:

Ingredients

  • 1lb scallops cut into bite size pieces
  • 8 limes juiced
  • 2 tomatoes diced juice removed
  • 5  scallions minced
  • 1/2 green bell pepper minced
  • 1/2 cup of parsley chopped
  • 1/8 cup cilantro chopped
  • 1 1/2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Directions

  1. Mix all the ingredients in a bowl
  2. Place in the refrigerator for 2 hours
  3. Serve with a garnish of sliced avocado and a orange slice
